Wake-Up Food

Boaters can perk up outdoor meals with coffee -- not on the side, but actually on the food.

One cooking secret we recently discovered was to use roasted coffee granules in our boating recipes. Combines with a special mix of herbs and spices, you can have your next morning cup o'joe sprinkled on breakfast steak ... or grapefruit.

The Java Rubs we found are Arabica coffee blends used just like a dry meat rub. Apply it to meat or fish about one hour before cooking. The subtle coffee flavor enhances food just enough to make your taste buds curious. There's also a special blend for fruit and desserts. Each 2-oz. coffee tin ($4.39 at keukalakecoffeeroasters.com) easily tucks into a galley or picnic basket.

Bananas Java

* 2 bananas 
* 2 Tbsp. butter
* Dessert Java Rub
* 1/4 cup walnuts 
* 1 Tbsp. honey

Slice bananas lengthwise and in half (8 total pieces). Sprinkle with Dessert Java Rub. Melt butter with a couple of pinches of Dessert Java Rub in pan. Add bananas and saute until caramelized (use high heat to avoid overcooking bananas). Add honey and walnuts. Serve as is or spoon it over brownies. Be creative and change the recipe by using other fruit/nut combinations such as apples/pecans or peaches/almonds.

Having coffee after a meal is a common custom. Having coffee on your meal is not. That could change. Keuka Lake Coffee Roasters is now selling Java Rubs, dry rubs created by blending coffee with herbs, spices, garlic, and brown sugar. The small company produces four varieties: one for beef, lamb, and venison; one for fish and seafood; one for pork and poultry; and they recently added another rub for use on fruit and desserts.
